I would like my email messages to show as blue instead of black.

When I send out a daily schedule email, I make the effort to have it look clean and professional with all the headlines matching color and size. Yet when my recipients receive the email, the font sizes change around and look terrible. Why isn't the composition I see the same as what my recipients receive?
I would like to change the background color of my mailbox from white to some other color, such as beige, to be easier on my eyes. Can I do this, and if so, how? Thank you.
I have a friend whom I just upgraded to Outlook 2010 for Mac. She loves the darker contrast of Entourage 2008 though. She is from the older generation and hesitant to upgrade. Is there a way to change the color on 2010 to mimic or at least get closer to the darker contrast of Entourage 2008?
Currently unred messages are shown in bold and red messages in regular font. It is however difficult to distinguish from bold and regular sometimes and miss emails. Ideally, I would like to change the color of unred fonts into a different color, like red, si I know what I have not red.

I am facing the following problems in outlook ( on Mac ) -

  •  my signature is blue color but matter is in black. How to change the color of text while drafting an email, by default in blue color 

These "controls" are set by drop-downs when we want to use other than the default values.

 

Once set for a new e-mail or reply (or by some configuration screen), how can these be saved to be the default from then on?

I send out a status report in Outlook (PC) in a table with some shading in the heading rows.  When my colleagues on Macs receive it - the entire table is blue(the shading color I use on the heading rows) - any idea why this would happen?
My boss and I just switch to mac from pc to Outlook 2011.

I have categorized all his appointments by color, but his appointments are no longer color categorized. How do I fix this?
