When sending new email contacts listed are only frequently used addresses. How do I gain access to full contacts list? Also how do I forward an email with an attachment ?

Just upgraded to OUTLOOK(?) but not happy.  When sending new email contacts listed are only frequently used addresses. How do I gain access to full contacts list?  Also how do I forward an email with an attachment ?
