Quick views – remove it?

I'm new to Live mail and am frustrated by

1) How do I turn off the Quick Views option (top of the lefthand pane) in Live MAil ?   

2) how to customize the ribbon.

Is this possible ?  Surely some programmer hasn't decided what is good for me.?
