How do I change the encoding in Windows live mail? I clicked on Unicode and it keeps reverting to Western European ISO.

I'm getting wierd symbols. Also when I correct them by clicking on Unicode, I get the wierd symbols when I print with my HP Photosmart. I can't find any options to change the settings for recieving, sending and printing.
